Restaurant Water Filter System South Florida: What Every Owner Needs to Know

A chef in Boca Raton called me because his sous vide bags kept bloating during cook. He'd tried everything — different vacuum sealer, different bags, different proteins. Three months of troubleshooting a technique problem that turned out to be a water problem.

His water had 4.2 ppm iron and 18 GPG hardness. The iron was reacting with proteins during extended low-temperature cooking. His kitchen had no filtration whatsoever.

A sediment and iron pre-filter upstream of his prep sinks fixed it in a week. Total cost: $420 installed.

That's the thing about water problems in commercial kitchens — they disguise themselves as something else. A technique issue. An equipment issue. A supplier issue. The water is invisible until someone tests it.

Here's what every South Florida restaurant owner needs to know about putting together a water filter system that actually works for a commercial operation.

Your Water System Is Not One Problem — It's Four

The mistake I see most often is restaurant owners buying a single filter and thinking they've handled it. They put a carbon block on the ice maker. The ice tastes better. But the dishwasher is still scaling. The steam oven is still failing. The espresso is still flat.

A restaurant water filter system in South Florida needs to address four distinct problems — each requiring a different solution:

Problem 1: Hardness. Calcium and magnesium that scale your equipment, clog your spray arms, coat your heating elements, and shorten the life of everything that heats water. Requires a water softener.

Problem 2: Chloramine and disinfection byproducts. The chemical taste your customers notice in their water glass and coffee. TTHMs and HAAs that form when chloramine reacts with organic matter. Requires catalytic carbon filtration.

Problem 3: Drinking water contaminants. PFAS, arsenic, nitrates, chromium-6 — the contaminants with health implications that municipal treatment doesn't fully address. Requires reverse osmosis for beverage stations and customer-facing water.

Problem 4: Sediment and particulates. Grit, rust, and particles from aging distribution infrastructure that clog valves, damage seals, and shorten equipment life. Requires mechanical pre-filtration.

South Florida water has all four problems. Miami-Dade WASD delivers PFOS at 4.7× the EPA's legal limit alongside 22.4 GPG hardness. Broward County WWS delivers chromium-6 above EWG cancer guidelines with 14–16 GPG hardness. Palm Beach County Water Utilities delivers chlorate above thyroid health guidelines with 15–18 GPG hardness.

The South Florida Restaurant Water Problem by the Numbers

Before we get into solutions, here's what you're actually dealing with — by utility.

If your restaurant is in Miami-Dade County: PFOS at 18.98 ppt (4.7× EPA MCL), PFOA above EPA MCL, TTHMs above EWG cancer guidelines, arsenic and chromium-6 above EWG health guidelines, and 22.4 GPG hardness — the hardest treated municipal water in all of South Florida. Every piece of equipment is running on water nearly four times the national hardness average.

If your restaurant is in Broward County: Chromium-6 above EWG cancer guidelines, HAAs and TTHMs above EWG cancer risk thresholds, PFAS above EWG health guidelines, and 14–16 GPG hardness. Chloramine disinfection producing a chemical taste throughout your beverage and cooking water.

If your restaurant is in Palm Beach County: Chlorate above EWG thyroid health guideline, chromium-6 above EWG cancer guideline, PFAS above EWG guidelines, TTHMs and HAAs above EWG thresholds, and 15–18 GPG hardness.

The hardness numbers are the most immediately damaging to equipment. The contaminant numbers are what your customers are ingesting through your water service and beverages.

Building a Restaurant Water Filter System: The Right Order

‍ ‍

Treatment order matters. Installing in the wrong sequence reduces effectiveness and can damage downstream equipment. Here's the correct sequence for a South Florida commercial installation.

‍ ‍

Stage 1 — Sediment pre-filtration (whole building) Goes first because everything downstream depends on it. A spin-down centrifugal separator handles larger particles without consumable media. Follow with a commercial Big Blue 20" sediment cartridge at 5–10 micron. Protects the softener resin and carbon media from fouling on grit and particulates.

Stage 2 — Water softener (whole building) Goes before the carbon filter. Soft water is easier for carbon media to treat — hardness minerals compete with contaminant adsorption on carbon surfaces. For South Florida hardness levels, size at 64,000–100,000 grain capacity for a typical restaurant. Regeneration should be timed for off-hours — 2–4 AM — to avoid pressure disruption during service.

Stage 3 — Catalytic carbon filter (whole building) Removes chloramine, TTHMs, HAAs, and organic compounds after softening. Catalytic carbon (not standard activated carbon) is required for effective chloramine removal — standard carbon removes free chlorine but is much less effective against chloramines, which is what South Florida utilities use. This stage fixes the taste problem at the source.

Stage 4 — UV sterilization (optional, well water or specific applications) For restaurants on private wells or in areas with documented bacterial concerns. UV kills 99.99% of bacteria, viruses, and protozoa without adding chemicals. Unnecessary on most South Florida municipal supplies but standard for well water.

Stage 5 — Point-of-use RO (beverage stations) Under-counter reverse osmosis at your espresso machine, your filtered water service, and your tea/coffee stations. This stage takes water from "clean" to "excellent" — removing the remaining TDS, any residual contaminants, and producing the flat, neutral base that specialty beverages require. Sized per station: 100–500 GPD commercial units depending on volume.

Getting the sizing right is where most commercial installations go wrong. An undersized softener regenerates too frequently, exhausting resin faster and creating service disruptions. An undersized carbon filter doesn't provide adequate contact time for chloramine removal. An undersized RO can't keep up with peak demand at a busy espresso bar.

What to Look for in a Commercial Water Filtration Provider

Not all water treatment companies handle commercial work the same way. A company that does residential softeners all day isn't necessarily equipped for a commercial restaurant installation.

‍ ‍

What matters for a South Florida restaurant specifically:

Flow rate calculation. A residential softener is sized for 8–12 GPM peak flow. A restaurant kitchen during lunch service might need 25–40 GPM. Undersizing the commercial softener means pressure drops at peak service times — exactly when you can least afford it.

NSF/ANSI certification. Equipment touching food-service water should be NSF/ANSI 61 certified for contact with potable water. Verify this before any commercial installation.

Regeneration scheduling. Your softener needs to regenerate. During regeneration, it passes hard water. For a restaurant, this needs to happen between 2–4 AM — not during lunch or dinner service. Make sure your installer understands and programs this correctly.

Maintenance contract. Commercial filtration is not set-and-forget. Carbon cartridges need replacement on schedule. Softener resin needs periodic cleaning. UV bulbs need annual replacement. Sediment pre-filters need regular monitoring. A commercial maintenance contract with a scheduled service provider is not optional — it's part of the system cost.

Health code familiarity. Your installer should know Florida DBPR requirements for food service water systems and install accordingly.

Common Mistakes South Florida Restaurant Owners Make

Installing only an ice machine filter and nothing else. Your ice tastes better. Everything else is unchanged. Your dishwasher is still scaling, your steam oven is still building deposits, and your espresso machine is still fighting hard water.

‍ ‍

Buying a residential softener for a commercial operation. A residential unit at 32,000 grain capacity cannot handle a restaurant's water demand. During peak service, you'll see pressure drops and inconsistent water quality. Commercial operations need commercial-rated equipment.

Skipping the pre-filter. Sending unfiltered South Florida water directly into a softener or carbon filter without sediment pre-filtration fouls the media faster and shortens system life significantly.

Using standard activated carbon instead of catalytic carbon. Standard carbon removes free chlorine effectively. It has limited effectiveness against chloramine — which is what WASD, Broward WWS, and PBCWU all use. If you're getting carbon filtration for chloramine removal, it must be catalytic carbon.

Not testing water after installation. The only way to verify a system is working is to test the water downstream of each treatment stage. TDS, hardness, and chloramine can all be tested quickly on-site. We do this as part of every commercial installation.

Setting and forgetting. A commercial water filtration system with expired cartridges and unmaintained media can become a contamination source rather than a treatment source. Establish a maintenance schedule and stick to it.
